Inspired by a delivery of empanadas ordered one night in Argentina, Nuchas’ Ariel Barbouth decided to leave his career in banking to launch his own line of eat-on-the-go delicacies. After several years of hand-peeling onions, cutting dough and glazing croissants, Barbouth now serves Nuchas’ unique brand of Argentine street food from several locations, including a Times Square kiosk and a roving food truck.
